Catering Captain

POSITION:                Catering Captain

SMG, the leader in privately managed public assembly facilities has excellent and immediate openings for Catering Captains at the Pinnacle Bank Arena. The Catering Captain reports to the Catering Manager and oversees all Catering Functions to include, coffee breaks, buffets, plated and reception events; any and all functions serving any food & beverage items.  Also to ensure that the assigned events and activities are organized and executed resulting in the complete satisfaction of the guests attending the event.

ESSENTIAL DUTIES & RESPONSIBILITIES: 

Include the following.  Other duties may be assigned.

  • Participates in training of all servers
  • Assists in maintaining and organizing all banquet equipment, cleanliness, regular inventories and annual maintenance
  • Must be creative in designing buffets and event décor
  • Attention to detail and consistency in every aspect of service is a must
  • Position is very hands-on with extensive interaction with clients and employees
  • Ensures all signage is properly displayed for each and every event
  • Fulfilling the service per each Banquet Event Orders (BEO), as well as Catering Department Service Standards
  • Daily communication with Catering Manager and Catering Staff. Frequent contact with Event Services Department staff, The Director of Food & Beverage, Executive Chef, Culinary Team and other Arena employees
  • Ensuring all relevant and applicable paperwork is filled out correctly
  • Reports to functions and events prior to serving staff to help organize and plan execution of event
  • Assigning duties to banquet staff, supporting banquet captains and other staff to specific job responsibilities and events/functions
  • Assists in the preparation of the area or room in its entirety for a function or event, prior to the guest’s arrival
  • Ensures space is cleaned after event and equipment is cleaned and stored properly
  • Execute event from beginning to end
  • Act as Manager on duty in absence of Catering Manager during events
  • Other duties as assigned

EDUCATION & EXPERIENCE

  • Minimum of 6 months to 1 year of service experience in a hotel, full service restaurant, catering facility or club environment preferred
  • Must be at least 19 years of age
  • Experience in a banquet facility servicing meals for large events is preferred
  • Current Lancaster County Food Handlers Permit, Server/Seller Permit and Responsible Beverage Service Training Certificate

Catering Server

POSITION: Catering Server

The Catering Server reports to the Catering Manager and serves food items to guests from behind a service counter, or serves guest in a plated setting, in accordance with SMG’s Universal Service Standards and applicable Operational Standards.

Essential Duties & Responsibilities

  • Sets up assigned areas prior to event, to ensure proper items are in place, in accordance with company procedures
  • Verifies and sets-up all food items and utensils
  • Replenishes food, condiments and utensils as needed 
  • Maintains standard of orderliness and cleanliness of area throughout the event 
  • Serves guests until the end of the required time
  • Clears all items from the area and cleans all surfaces 
  • Re-sets and re-stocks area for next function 
  • Completes closing functions and checks out with supervisor 
  • Performs other duties as assigned

Knowledge, Skills & Abilities

  • Excellent guest service skills; ability to adhere to Company’s Universal Service Standards

Concessions Worker

The Concessions Worker reports to the Concessions Manager and operates the concession stand in accordance with SMG’s policies and procedures and is responsible for providing a quality product to patrons in a courteous, friendly and efficient manner and utilizing our Guest Service Standards and Responsible Alcohol Service in all transactions.

Essential Duties & Responsibilities:

  • Follows Concession Manager/Supervisor’s assignments for opening procedures and food preparation
  • Prepares food and beverage items using proper procedures and sanitation guidelines
  • Is cost conscious, does not over-portion and records all waste
  • Keeps work area and equipment neat and clean
  • Properly cleans equipment and follows the Concession Manager/Supervisor’s closing instructions
  • Properly records all transactions via the point of sale system and inform guests of amount owed.
  • Reports for work, is at stand on a timely basis and is in complete uiform with clothing and personal appearance neat and clean.
  • Maintains high standards of customer service by greeting all guests and being genuinely interested in their needs.
  • Acquaints guest with itmes for sale and upsells and adds on.
  • Serves alcoholic beverages responsibly and according to SAVOR policies and procedures.
  • Obtains the proper tender amount for each transaction and exchanges goods for tender.
  • Places the guest’s bill on the till and counts back change.
  • Ends transactions in a positive way.
  • Shows flexibility in rotating to other stands as assigned.
  • Sets a good example in cooperation, patience and effort.

The Cook reports to the Executive Chef and prepares and serves hot and/or cold food items, in accordance with SMG’s Universal Service Standards and applicable Operational Standards.

Essential Duties & Responsibilities:

  • Properly prepares, measures, and portions all food items in a timely manner. Complies with all quality standards, department rules, policies and procedures
  • Utilizes and sets up kitchen equipment to prepare food items such as: knives, slicers, whips, pots, pans, warmers, steamers, grills, ovens, etc.; properly uses ALL kitchen equipment
  • Ensures proper food temperatures are maintained, food is stored correctly and ensures freshness and quality of all menu items
  • Packages all products to proper specifications
  • Performs opening, closing and side work duties as instructed and according proper guidelines
  • Keeps workstation and equipment clean, organized, sanitized, and sufficiently stocked
  • Follows and upholds all health codes and sanitation regulations
  • Uses waste control guidelines and records all waste on spoilage sheet
  • Performs other duties assigned

SMG, the leader in privately managed public assembly facilities has excellent and immediate openings for a Environmental Services Attendants at SMG Lincoln. The Environmental Service Attendant report to the Environmental Services Supervisor and is primarily responsible for cleaning and waste/trash disposal.

Essential Duties and Responsibilities:

Includes the following. Other duties may be assigned.

  • Maintain restrooms and/or areas of the facility before, during, and after events.
  • Perform cleaning and janitorial tasks as required or assigned. These include, but not limited to, replenishing supplies, sweeping, mopping, dusting, trash removal, vacuuming, washing and waxing.
  • Empty trash and wastebaskets. Transport trash and waste to proper disposal areas.
  • Make minor repairs such as painting, patching and replacing light fixtures and filters, when applicable.
  • Set-up & tear-down of tables and chairs for events.
  • Assist with event set-up, tear-down and clean-up.
  • Clean restrooms and replenish supplies.

Knowledge, Ablilites and Skills:

Event Security

POSITION: Event Security

REPORTS TO:  Event Services Manager on Duty

SMG, the leader in privately managed public assembly facilities has excellent and immediate openings for Event Security at the Pinnacle Bank Arena. The Event  Security report to the Event Services Manager and is responsible for patrolling all areas of arena property and parking lots, securing doors, ensuring the safety of all guests, employees, and contract labor while on premises, and securing property during move in/out of trade shows, conventions, or events.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Stand guard during events.  Tour post periodically to ensure safety of patrons, staff, vendors, participants, and others on premises.
  • Handle any disturbances or problems that arise during events at the facility.  If necessary, and in conjunction with local law enforcement, escort disruptive individuals off the premises.
  • Report incidents to supervisor so incident report can be written.
  • Inspect premises for signs of intrusion or tampering.
  • Tour facility, examining doors, windows, and gates to ensure that they are secure.
  • Assist with crowd control inside and outside of arena.
  • Assist in the control of unusual circumstances and events during fire, storms, riots, and other emergencies.
  • Respond immediately to emergency situations-answer alarms and investigate disturbances.
  • Act in a professional manner with clients, employees, exhibitors, patrons, and others encountered in the course of employment.
  • Ensure that every client, patron, and vendor receives the best services possible.
  • Perform other tasks as assigned.

KNOWLEDGE, ABLILITES AND SKILLS

SUMMARY

Sells food and beverage products to guests throughout venue in accordance with Company’s Service Standards and applicable Operational Standards.  Pay is based on commissions of items sold.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Circulates among guests within assigned section and calls out items for sale.  Hands or passes items sold to guests, receives payments and makes required change.  Checks out items to replenish stock, turns in money for sales.
  • Supplies one’s own money for bank to use for guests’ change.  
  • Must be flexible so as to work a variety of hours depending on the event.  
  • Must be well groomed, pleasant and friendly.
  • Must have basic math skills.

EDUCATION & EXPERIENCE

  • No experience required; previous cash handling experience preferred.

KNOWLEDGE, SKILLS & ABILITIES

  • Excellent guest services skills; ability to adhere to Company’s Service Standards.

Operations Crew Member

The Operations Crew Member reports to the Operations Supervisor and is primarily responsible for performing work as needed to clean, maintain and prepare for events at the facility. Duties include skilled and semi-skilled tasks, which often require heavy lifting and a high degree of physical exertion.

Essential Duties and Responsibilities:

  • Participate in all aspects of the conversion process in preparation for events. Duties may include setting up and tearing down flooring, portable chairs, barricades, staging, tables, other furnishings and equipment.
  • Perform varies duties to ensure the day-to-day operations of the facility are met. These include, but are not limited to loading/unloading delivery trucks, transporting trash and waste to proper disposal area and replenishing supplies.
  • Assist with pre/post event cleaning and janitorial tasks including, but not limited to, sweeping, mopping, dusting, trash removal, vacuuming, spot cleaning, washing, stripping, carpet cleaning, window washing and waxing.
  • Perform repairs and maintenance tasks such as painting, patching, re-lamping, replacing ceiling tile, replacing filters, etc.
  • Report irregularities, discrepancies, safety or damage concerns or loss of property promptly to Operations Supervisor.
  • Work extended and/or irregular hours including nights, weekends and holidays, as needed.

Knowledge, Ablilites and Skills:

  • Demonstrate knowledge of practices and procedures related to event set-up and conversions; typical methods and techniques for cleaning and maintaining the facility; and proper use and care of hand and power tools.
  • Demonstrate a positive attitude and a willingness to learn.
  • Follow all policies/procedures, risk management, safety precautions, rules, regulations and emergency procedures established at the facility.
  • Meet the physical demands of the job. Must perform strenuous physical duties at times, including lifting, carrying, moving and climbing.
  • Operate equipment such as light trucks, pallet jacks, forklifts, boom lifts, Zamboni machine, scrubbing machines or other light power driven equipment.
  • Follow oral and written instructions and communicate effectively with other in both oral and written form.

Prep Cook

POSITION: Prep Cook
DEPARTMENT: Savor….Food & Beverage
REPORTS TO: Executive Chef
FLSA STATUS: Non-Exempt Hourly

SMG, the leader in privately managed public assembly facilities has excellent and immediate openings for Prep Cooks at the Pinnacle Bank Arena. The Prep Cook reports to the Executive Chef and is responsible for assisting the chefs and cooks by prepping food for events. This position also assists in preparing location and area for day to day operations.

Essential Duties & Responsibilities:

Include the following. Other duties may be assigned.

  • Prep ingredients for cooking
  • Washing, chopping and cutting of ingredients
  • Making precise measurements
  • Help mix spices
  • Package and store leftover foods
  • Store and properly handle raw or prepared foods and non-food supplies
  • Stir stocks, sauces and dressings
  • Testing the temperature of foods
  • Distribute and store clean pots, dishes and utensils
  • Washing dishes and taking out trash

Minimum Requirements

  • Basic working knowledge of food and beverage
  • Basic food preparation
  • Ability to follow oral and written instructions and effectively perform the work
  • Fundamental understanding of sanitation, cleanliness and personal hygiene
  • Positive attitude and neat appearance
  • Must speak and understand English
  • Must be able to stand and walk for the duration of the shift

  • Working conditions involve noise, heat, changes in temperature, kitchen elements, odors, moisture, etc.
  • May be required to work additional hours as dictated by the work load and staffing
  • Must be willing to work evenings, weekends and holidays

Education & Experience

  • Must be at least 18 years of age
