Catering Server

POSITION: Catering Server
DEPARTMENT: Savor….Food & Beverage
REPORTS TO: Catering Manager
FLSA STATUS: Non-Exempt Hourly

SMG, the leader in privately managed public assembly facilities has excellent and immediate openings for Catering/Club Servers at the Pinnacle Bank Arena. The Catering/Club Server reports to the Premium Services Food & Beverage Manager and serves food items to guests from behind a service counter, or serves guest in a plated setting, in accordance with SMG’s Universal Service Standards and applicable Operational Standards.

Essential Duties & Responsibilities

  • Sets up assigned areas prior to event, to ensure proper items are in place, in accordance with company procedures
  • Verifies and sets-up all food items and utensils
  • Replenishes food, condiments and utensils as needed 
  • Maintains standard of orderliness and cleanliness of area throughout the event 
  • Serves guests until the end of the required time
  • Clears all items from the area and cleans all surfaces 
  • Re-sets and re-stocks area for next function 
  • Completes closing functions and checks out with supervisor 
  • Performs other duties as assigned

Knowledge, Skills & Abilities

  • Excellent guest service skills; ability to adhere to Company’s Universal Service Standards
  • Ability to complete required pre-employment food and alcohol service training

Concession Worker

The Concessions Worker reports to the Concessions Manager and operates the concession stand in accordance with SMG’s policies and procedures and is responsible for providing a quality product to patrons in a courteous, friendly and efficient manner and utilizing our Guest Service Standards and Responsible Alcohol Service in all transactions.

Essential Duties & Responsibilities

  • Follows Concession Manager/Supervisor’s assignments for opening procedures and food preparation
  • Prepares food and beverage items using proper procedures and sanitation guidelines
  • Is cost conscious, does not over-portion and records all waste
  • Keeps work area and equipment neat and clean
  • Properly cleans equipment and follows the Concession Manager/Supervisor’s closing instructions
  • Properly records all transactions via the point of sale system and inform guests of amount owed.
  • Reports for work, is at stand on a timely basis and is in complete uiform with clothing and personal appearance neat and clean.
  • Maintains high standards of customer service by greeting all guests and being genuinely interested in their needs.
  • Acquaints guest with itmes for sale and upsells and adds on.
  • Serves alcoholic beverages responsibly and according to SAVOR policies and procedures.
  • Obtains the proper tender amount for each transaction and exchanges goods for tender.
  • Places the guest’s bill on the till and counts back change.
  • Ends transactions in a positive way.
  • Shows flexibility in rotating to other stands as assigned.

Essential Duties & Responsibilities

  • Properly prepares, measures, and portions all food items in a timely manner. Complies with all quality standards, department rules, policies and procedures
  • Utilizes and sets up kitchen equipment to prepare food items such as: knives, slicers, whips, pots, pans, warmers, steamers, grills, ovens, etc.; properly uses ALL kitchen equipment
  • Ensures proper food temperatures are maintained, food is stored correctly and ensures freshness and quality of all menu items
  • Packages all products to proper specifications    
  • Performs opening, closing and side work duties as instructed and according proper guidelines
  • Keeps workstation and equipment clean, organized, sanitized, and sufficiently stocked
  • Follows and upholds all health codes and sanitation regulations
  • Uses waste control guidelines and records all waste on spoilage sheet

SMG, the leader in privately managed public assembly facilities has an excellent and immediate opening for a Director of Food & Beverage at Pinnacle Bank Arena in Lincoln, Nebraska.  The Director of Food & Beverage directs and coordinates the entire food and beverage operation at the facility by performing the following duties personally or through subordinate supervisors.

MAJOR RESPONSIBILITIES 

  • Markets Food and Beverage services to clients and establishes Food and Beverage control.
  • Creates Food and Beverage sales projections and budgets for facility events.
  • Develops event work plans including scheduling and ordering, and assigns appropriate duties to subordinates.
  • Reviews food and beverage lists to determine that sufficient items are ordered weekly.
  • Oversees Food and Beverage operations during event to ensure client satisfaction.
  • Maintains cost and quality control standards.
  • Inspects food service facilities to ensure that equipment meets requirements of state and local health laws and internal regulations.
  • Analyzes information concerning facility operation such as daily food sales, patron attendance, and labor costs to prepare budget and to maintain cost control of facility operations.
  • Inspects and tastes prepared foods to maintain quality standards and sanitation regulations
  • Manages subordinate Catering, Concessions, Chef/Kitchen supervisors. Is responsible for the overall direction, coordination, and evaluation of any of these units. Carries out supervisory responsibilities in accordance with SMG's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.
  • This position will work with limited supervision and will require the ability to interact with all levels of staff including management. Requires ability to work flexible hours, including nights, weekends and holidays, in addition to normal business hours.

QUALIFICATIONS

Essential Duties & Responsibilities

  • Washes dishes, glassware, pots, pans, flatware and kitchen items, using dish machines or by hand
  • Places clean dishes, utensils and cooking equipment in storage areas
  • Cleans work area including equipment, floors, walls and cooking area
  • Ensures that all levels for sanitizer on dish machine and pot sinks are at specific requirements for health standards
  • Keeps all kitchen wares storage areas clean and orderly
  • Removes trash from dish room and transports to dumpster and cleans and sanitizes garbage cans 
  • Stocks supplies such as food, dishes, and utensils in serving stations, cupboards, refrigerators and salad bars
  • Assists with accepting delivery items and storage of such items
  • Transfers supplies and equipment between storage and work areas, by hand or using hand trucks
  • Assists in cleaning and preparing various foods for cooking or serving as needed

Environmental Services Attendant

JOB DESCRIPTION

Under general supervision, responsible for cleaning and waste/trash disposal of an assigned area.  Maintain all areas inside and outside of the building including but not limited to restrooms, hallways, arena attic, locker room, sidewalks, parking landscape, both during an event and nonevent times.    This includes but is not limited to replenishing supplies, sweeping, mopping, dusting, trash removal and sorting, vacuuming, washing, waxing, lawn work, snow and ice removal.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Maintain the general building and ground in a safe and clean matter.
  • Perform cleaning and janitorial tasks as required or assigned.  These include, but not limited to, replenishing supplies, sweeping, mopping, dusting, trash removal and sorting, vacuuming, washing waxing, snow and ice removal.
  • Empty trash and wastebaskets.  Transport trash and waste to proper disposal areas. Sort recycling as needed.
  • Operate custodial equipment and other related equipment as required.
  • Report all damage and equipment needed repairs to your supervisor.
  • Make minor repairs such as painting, patching and repairing bathroom dispenser when applicable.
  • Set-up & tear-down of tables and chairs for events. 
  • Assist with event set-up, tear-down and clean-up.
  • Clean restrooms and replenish supplies.
  • Other duties may be assigned.

  • Follow oral and written instructions and communicate effectively with others in both oral and written form

Operations Crew Member

JOB TITLE: Operations Crew Member

The Operations Crew Member reports to the Operations Supervisor and is primarily responsible for performing work as needed to clean, maintain and prepare for events at the facility.  Duties include skilled and semi-skilled tasks, which often require heavy lifting and a high degree of physical exertion.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Participate in all aspects of the conversion process in preparation for events.  Duties may include setting up and tearing down flooring, portable chairs, barricades, staging, tables, other furnishings and equipment.
  • Perform varies duties to ensure the day-to-day operations of the facility are met.  These include, but are not limited to loading/unloading delivery trucks, transporting trash and waste to proper disposal area and replenishing supplies.
  • Assist with pre/post event cleaning and janitorial tasks including, but not limited to, sweeping, mopping, dusting, trash removal, vacuuming, spot cleaning, washing, stripping, carpet cleaning, window washing and waxing.
  • Perform repairs and maintenance tasks such as painting, patching, re-lamping, replacing ceiling tile, replacing filters, etc.
  • Report irregularities, discrepancies, safety or damage concerns or loss of property promptly to Operations Supervisor.
  • Work extended and/or irregular hours including nights, weekends and holidays, as needed.
  • Other duties may be assigned.

KNOWLEDGE, ABLILITES AND SKILLS

  • Demonstrate knowledge of practices and procedures related to event set-up and conversions; typical methods and techniques for cleaning and maintaining the facility; and proper use and care of hand and power tools.
  • Demonstrate a positive attitude and a willingness to learn.
  • Follow all policies/procedures, risk management, safety precautions, rules, regulations and emergency procedures established at the facility.
  • Meet the physical demands of the job.  Must perform strenuous physical duties at times, including lifting, carrying, moving and climbing.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Work directly with the Food Service Director to ensure all catering menu proposals are presented to the client accurately & effectively
  • Work with the service staff to see that message handling with administrative support is efficiently handled and placed in the computer based system immediately
  • Work closely with the Audio Visual to ensure room set-ups, audio/visual needs and special requests

QUALIFICATIONS

  • Strong knowledge of current food, industry trends and fine dining points of service
  • A minimum of 2 -4 years of experience in hospitality industry including 1 year of supervisory experience

Prep Cook

POSITION: Prep Cook

The Prep Cook is responsible for assisting the chefs and cooks by prepping food for events. This position also assists in preparing location and area for day to day operations.

Essential Duties & Responsibilities

  • Prep ingredients for cooking
  • Washing, chopping and cutting of ingredients
  • Making precise measurements
  • Help mix spices
  • Package and store leftover foods
  • Store and properly handle raw or prepared foods and non-food supplies
  • Stir stocks, sauces and dressings
  • Testing the temperature of foods
  • Distribute and store clean pots, dishes and utensils
  • Washing dishes and taking out trash
  • Other duties may be assigned.

Minimum Requirements

  • Basic working knowledge of food and beverage
  • Basic food preparation
  • Ability to follow oral and written instructions and effectively perform the work

Suite Attendant

The Suites Attendant maintains organization and cleanliness of suites and assists guests in accordance with SMG’s Universal Service Standards and applicable Operational Standards.

Qualifications

  • Ideal Candidates must have strong verbal communication skills and a professional demeanor. They must be self-motivated and be able to stand for long periods of times.  Candidate must be personable and guest service driven.

Essential Duties & Responsibilities

  • Pre-event suite set-up including chafing dishes, plates and silverware, televisions, lighting and overall ambiance in the suite 
  • Verify and set-up all pre-game orders 
  • Identify suite host and properly introduce yourself 
  • Take and place game day food and beverage orders 
  • Set-up and check on game day food and beverage orders and serve guests until the end of the event
  • Replenish food, beverages, condiments and utensils as needed 
  • Maintain standard of orderliness and cleanliness of suite throughout the event 
  • Obtain signatures from the host on charges in a timely manner 
  • Clear all items from the suite and clean all surfaces and chafing dishes in suite 
  • Reset suite for next function, complete closing functions and check out with supervisor or manager
  • Other duties may be assigned.

Expectations

  • Must have good customer service skills and the ability to develop and enhance guest loyalty
  • Must follow all SMG and SAVOR policies and procedures
  • Must be present for all major events at the Arena

Knowledge, Skills & Abilities

  • Excellent guest service skills; ability to adhere to Universal Service Standards
  • Ability to complete required pre-employment sanitation and alcohol service training 
  • Knowledgeable in the operating food service equipment, basic food preparatory techniques, sanitation and safety issues.

  • Delivers orders from kitchen to guest in an efficient and timely manner 
  • Completes opening and closing side work as assigned
  • Performs other duties as assigned by supervisor and manager

  • Bus suites, with the suite attendant’s approval, taking empty dishes to the kitchen

T-Shirt Security

REPORTS TO:  Event Services Manager on Duty

SMG, the leader in privately managed public assembly facilities has excellent and immediate openings for T-Shirt Security at Pinnacle Bank Arena. The T-Shirt Security report to the Event Services Manager and is responsible for patrolling all areas of arena property and parking lots, securing doors, ensuring the safety of all guests, employees, and contract labor while on premises, and securing property during move in/out of trade shows, conventions, or events.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Stand guard during events.  Tour post periodically to ensure safety of patrons, staff, vendors, participants, and others on premises.
  • Handle any disturbances or problems that arise during events at the facility.  If necessary, and in conjunction with local law enforcement, escort disruptive individuals off the premises.
  • Report incidents to supervisor so incident report can be written.
  • Inspect premises for signs of intrusion or tampering.
  • Tour facility, examining doors, windows, and gates to ensure that they are secure.
  • Assist with crowd control inside and outside of arena.
  • Assist in the control of unusual circumstances and events during fire, storms, riots, and other emergencies.
  • Respond immediately to emergency situations-answer alarms and investigate disturbances.
  • Act in a professional manner with clients, employees, exhibitors, patrons, and others encountered in the course of employment.
  • Ensure that every client, patron, and vendor receives the best services possible.
  • Perform other tasks as assigned.
