Executive Chef

POSITION: Executive Chef  
DEPARTMENT: Food & Beverage
REPORTS TO: Director of Food & Beverage and General Manager
FLSA STATUS: Full-time, Salaried, Exempt 

Summary

  • SMG, the leader in privately managed public assembly facilities, has an excellent and immediate opening for the Executive Chef for SMG/Pinnacle Bank Arena. Responsible for – directing and coordinating chefs, cooks, and other kitchen staff engaged in preparing and cooking foods.

Essential Duties and Responsibilities

  • Designs creative menus and plans production.
  • Establishes presentation technique and quality standards.
  • Schedules and supervises Kitchen employees.
  • Coordinates and directs training of chefs, cooks and other kitchen staff in preparing and cooking foods to ensure high quality, efficient and profitable food service.
  • Responsible for food preparation for the entire Arena, including but not limited to Concessions, Suites, Catering, and off property events.
  • Estimates food consumption, purchases and kitchen supplies.
  • Responsible for ordering product to maintain adequate inventory.
  • Monitors inventory levels to minimize food costs and spoilage.
  • Reviews menus, analyzes recipes, and determines food, labor, and overhead costs.
  • Assigns prices to menu items in accordance with budgetary goals.
  • Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.
  • Establishes and enforces nutrition, sanitation and quality standards for food and beverage.
  • Responsible for maintaining the cleanliness and sanitation of the kitchen and food preparation areas according to the rules and regulations of the local health department and SMG/Savor.
  • Other duties may be assigned.

Supervisory Responsibilities   

  • The Sous Chef will report to the Executive Chef.   
  • Directly supervises all Kitchen personnel. Carries out supervisory responsibilities in accordance with SMG's policies and applicable laws including training. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.

Qualifications

Education and/or Experience        

  • Certificate from accredited culinary school, college or technical school
  • 3 or more years of hands on experience 
  • 1 or more years of Kitchen/culinary supervisory experience
  • Large arena or venue experience preferred

Skills and Abilities 

  • Ability to use and maintain basic food service and kitchen equipment
  • Ability to train others in the use of basic food service and kitchen equipment
  • Strong analytical and mathematic skills in relation to the culinary profession and Food and Beverage industry 
  • Strong communication skills and the ability to read, write and understand English
  • Ability to interact with all levels of staff, including management
  • Ability to problem solve  
  • Ability to work under limited supervision
  • Ability to cater large events for over 2500 guests
  • Requires flexible hours that will vary due to function needs

Computer Skills  

  • Knowledge of computers. Word processing and spreadsheet experience is preferred

Other Qualifications 

  • Current certification in food handling and safety sanitation (Sani-Serve or similar) or ability to be certified with minimal preparation is required

Premium Services Manager

POSITION: Premium Services Manager
DEPARTMENT: Event Services
REPORTS TO: Director of Event Services
FLSA STATUS: Salaried, Exempt

  • SMG, the leader in privately managed public assembly facilities has an immediate opening for a Premium Services Manager at the Pinnacle Bank Arena. The Premium Services Manager reports to the Event Services Director, and oversees all event service and operation activities for luxury Suites, Loges and Club premium seating. This position is responsible for providing the best customer service possible to the Club seat holders (832 Club seats), luxury Suite holders (36 twelve person Suites) and the Loge Box holders (20 four person Loges). The Premium Services Manager will build relationships with the Premium Seating owners and administrators working to meet their specific requirements. Long term, this position will provide service to the Premium Seating customers, positioning SMG and the City of Lincoln to be able to renew the various seating contracts. A significant part of the job is coordinating ticket requests and ticket coding within the Ticketmaster and Archtics systems to provide the proper tickets to the Premium Seat holder or their guests in a timely manner. It is anticipated that the Premium Services Manager will take a leading role in the Seating Contract renewal process. 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Interacts with customers before, during and after events to resolve customer-related issues
  • Gains knowledge of Suite/Loge/Club seat clientele in order to provide excellent customer service
  • Works closely with the PBA Ticket Office to ensure ticket distribution integrity and high levels of service for Premium Seating clients
  • Works closely and under specific timetables to classify and coordinate Club seat ticket requests and enter those requests in to the ticketing system
  • Responsible for ticket fulfillment utilizing Ticketmaster and Archtics ticketing systems as a database while creating a historic record of the patrons purchases
  • Accountable for updating and maintaining current contact information, ticket purchase history and client payment data for Premium patrons
  • Responsible for developing, implementing and overseeing, with the Event Services Director, all service and operation policies, procedures and programs
  • Assists in the development and coordination of Premium Food & Beverage functions
  • Administers premium services that includes VIP parking and all related parking issues and works with Parking Manager to solve parking premium parking issues
  • Assists in the development and coordination of special events and value added programs for Club members, including website
  • Serves as a liaison with other Event Staff affecting the Suite levels, including Security, Maintenance, Event Services, Food & Beverage and Guest Services departments and teams
  • Provides on-going communication and problem resolution to customers throughout the events and daily contact on issues dealing with event announcements, account changes, Suite décor and maintenance
  • Manages Suite signage: gathering and preparing equipment and signs
  • Monitors and implements Suite inventory and major maintenance of Suites
  • Premium Manager will take a lead role in the process to renew Club seats and other Premium Seating products
  • Other duties may be assigned.

  • Managing responsibilities include overall direction, coordination, and evaluation of these above-mentioned functions. 
  • Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws.

T-Shirt Security

REPORTS TO: Event Services Manager on Duty
FLSA STATUS: PT Hourly, Non-Exempt

  • SMG, the leader in privately managed public assembly facilities has excellent and immediate openings for T-Shirt Security at Pinnacle Bank Arena. The T-Shirt Security report to the Event Services Manager and is responsible for patrolling all areas of arena property and parking lots, securing doors, ensuring the safety of all guests, employees, and contract labor while on premises, and securing property during move in/out of trade shows, conventions, or events.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Includes the following.  Other duties may be assigned.
  • Stand guard during events.  Tour post periodically to ensure safety of patrons, staff, vendors, participants, and others on premises.
  • Handle any disturbances or problems that arise during events at the facility.  If necessary, and in conjunction with local law enforcement, escort disruptive individuals off the premises.
  • Report incidents to supervisor so incident report can be written.
  • Inspect premises for signs of intrusion or tampering.
  • Tour facility, examining doors, windows, and gates to ensure that they are secure.
  • Assist with crowd control inside and outside of arena.
  • Assist in the control of unusual circumstances and events during fire, storms, riots, and other emergencies.
  • Respond immediately to emergency situations-answer alarms and investigate disturbances.
  • Act in a professional manner with clients, employees, exhibitors, patrons, and others encountered in the course of employment.
  • Ensure that every client, patron, and vendor receives the best services possible.
  • Perform other tasks as assigned.

KNOWLEDGE, ABLILITES AND SKILLS

  • Ability to work extended and/or irregular hours including nights, weekends and holidays as needed.

The Warehouse Porter assists the Warehouse Manager in delivering product orders to the concession stands. To help the Concessions Manager maintain adequate inventory levels and perform assigned tasks to help maintain operational standards of the concession stand in accordance with SMG’s Universal Service Standards (and applicable Operational Standards).

Essential Functions

  • Presents a cooperative work attitude and cheerfully accepts job responsibilities
  • Delivers appropriate stock to all concession stands, portables and commissaries
  • Learns correct containers and food products used in portables and stands
  • Properly cleans commissaries, concession stands and portables, as assigned
  • Reports all needed stand repairs to the Commissary Manager
  • Must adhere to the SMG dress code which includes wearing non-slip soled closed toe shoes
