Summary

Essential Duties and Responsibilities

  • Properly prepares, measures, and portions all food items in a timely manner. 
  • Complies with all quality standards, department rules, policies, and procedures.
  • Utilizes and sets up kitchen equipment to prepare food items.
  • Packages all products to proper specifications.
  • Performs opening, closing and side work duties as instructed.

Summary

This position also assists in preparing for the day to day operations of the kitchen.  Serves meals by reviewing recipes; assembling, combining and cooking ingredients; in addition to, maintaining a sanitary kitchen.

  • The Environmental Services Attendant is responsible for cleaning and waste/trash disposal and maintaining all areas inside and outside.

Essential Duties & Responsibilities

  • Maintain the general building and ground in a safe and clean manner.
  • Perform cleaning and janitorial tasks as required or assigned.  
  • Empty trash and wastebaskets.  
  • Transport trash and waste to proper disposal areas, and sort recycling as needed.
  • Operate custodial equipment and other related equipment as required.
  • Set-up & tear-down of tables and chairs for events and assist with event clean up.
  • Clean and sanitize restrooms and replenish supplies.
  • Clean and sanitize other public areas around the premises.

Summary

Essential Duties and Responsibilities

  • Scrape and sort dishes before loading them into a dishwashing machine for cleaning
  • Maintain dishwashing machine and report any mechanical faults to Executive Chef or Sous Chef
  • Monitor dish machine water temperature during sanitized wash cycle and record temperature on log
  • Washes dishes, glassware, pots, pans, flatware and kitchen items using dish machines or by hand
  • Places clean dishes, utensils and cooking equipment in storage areas after they have air-dried
  • Clean work areas including equipment, floors, walls and cooking areas
  • Ensures that all chemicals for dish machine and 3-compartment sink are kept filled 
  • Keeps all kitchen wares storage areas clean and orderly
  • Remove trash from kitchen and transports to dumpster and clean/sanitize all garbage cans 
  • Assists with accepting delivery items and storage of such items
  • Transfers supplies and equipment between storage and work areas by hand or using carts
  • Occasionally assist in kitchen prep

SUMMARY

Legends Global, the leader in privately managed public assembly facilities, has an excellent and immediate opening for Food & Beverage Manager for Legends Global/Pinnacle Bank Arena/Pinewood Bowl. The Food & Beverage Manager, in partnership with the other Food & Beverage Managers, oversees the entire Concessions department including the Warehouse. The Food & Beverage Manager will contribute to the growth and profitability of the business, while maintaining a strong working relationship with the clients and guests by ensuring efficient quality service & products.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Oversees concessions and warehouse associates including developing, promoting, corrective counseling, mentoring, evaluating performance, and providing positive and constructive feedback to improve overall performance.
  • Sets Inventory levels and creates recs in the warehouse, concession stands, portables, bars and kiosks.
  • Orders product for events; inspects and accepts deliveries for quality and accuracy.
  • Maintains existing programs and develops new creative concepts that ensure the highest quality of food and beverage service.
  • Works with the Executive Chef & Senior Food & Beverage Manager to ensure the highest quality F&B standards are met.
  • Oversee prices & portions for products and services within approved profit plan guidelines.
  • Works with the F&B team to ensure that all stands are visually appealing, well lit, with accurate signage.
  • Product at stands and bars must be displayed in the most appropriate way in accordance with the best-in-class industry standards.
  • Study current trends in the industry to understand the most up to date service standards and bring that knowledge to the team to constantly update and improve the operation.
  • Ensure proper repair & maintenance schedule of food and beverage service equipment (Altum Asset Essentials); report plans to replace, remodel equipment, & facilities submitted quarterly to the Director of Food & Beverage
  • Responsible for all aspects of operations to include permanent stands, portable carts, bars, kiosks, and warehouse.
  • Responsible for maximizing sales by ensuring that guests receive an exceptional overall experience and that service expectations are met or exceeded within all unit outlets.
  • Responsible for MBWA “Management by Walking Around” during events to adjust the operation and interact with the staff & guests.
  • Coordinate the End of Month inventory process with the Senior Food & Beverage Manager. This includes entering inventory counts, reviewing discrepancies, and spot check recounts.
  • Works with Senior Food & Beverage Manager to actively attract Concessions Staff and NPO groups and assign positions during events as well as close out events.
  • Works with Senior Food & Beverage Manager in recruiting, training, and staffing all concessions and warehouse areas.
  • Works with Senior Food & Beverage Manager to maintain staff training manual including SOPs.
  • Share responsibility with other Food and Beverage Managers to work within our computer systems to create sales documents, input inventory, code payroll, open and close events in the POS system, work with Humanity on staffing, create POs within our systems, and generally provide the Director of Food and Beverage with any required documents or other similar electronic reporting.
  • Complies with local Health Department and Legends safe Beverage regulations.
  • Ensure all Legends policies and procedures are followed by all staff.
  • Provide excellent customer service to all clients and vendors.

SUPERVISORY RESPONSIBILITIES

  • Shares supervision of Concessions Staff & Supervisors with Senior Food & Beverage Manager
  • Carries out management & supervisory responsibilities in accordance with Legend’s policies and applicable laws.
  • Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.

Summary    

  • Legends Global, the leader in privately managed public assembly facilities, is currently recruiting for Director of Event Services for Pinnacle Bank Arena. Under general supervision of the General Manager, you will be responsible for the overall coordination and execution of all ticketed and non-ticketed events.

 

Essential Duties & Responsibilities

 

  • Direct, supervise and schedule all aspects of operations including event coordination and services, event staffing, Manager on Duty schedules, audio/visual production services, all security, crowd and risk management, police, fire and safety personnel, and ADA compliance. 

  • Directly supervise Event, Guest Services, Security, and Parking Managers, and their applicable part time staff.

  • Assist in the preparation and negotiation of service agreements for event services security, event staffing and other agreements as needed.  Review contracts for compliance with event and/or government specifications and suitability for occupancy.

  • Act as liaison between unions, tenants, facility contractors and county emergency personnel as needed.

  • Know and ensure all laws, codes, ordinances, policies, procedures, risk management, safety precautions, rules/regulations and emergency procedures are followed. 

  • Attend department head and staff meetings.  Develop and maintain a harmonious working relationship with all of the other departments.

  • Oversee coordination and management of the IATSE stagehand union for all venue events.

  • Oversee coordination and management of merchandise with the events and the venue’s merchandise entity.

  • Lead communication of necessary event information to staff & stakeholders; troubleshoot and problem solve.

  • Monitor and supervise facility set-up when necessary, actively work with clients to ensure their needs are met.

  • Monitor, review, and ensure front of house and back of house areas are appropriately ready and in good standing prior to and during events; troubleshoot and problem-solve issues preemptively, and in real time.

  • Work with Team Members and others to resolve any outstanding issues, conduct after action reports as needed.

  • Attend appropriate planning, organization, and other event and facility meetings.

  • Assist in non-concert bookings (meetings, banquets, trade shows, etc) and accurately execute calendar holds, rental terms, and contracts.

  • Assist in annual budget preparation for the department.

  • Prepare reports of monthly event activities for submission to the General Manager.

  • Develop standard operating procedures for the Event Services Department and monitor their compliance.

  • Hire, train, and evaluate all Event Services Team Members.

  • Plan, organize, and assign all day-to-day work assignments for Event Services team members, and for events.

  • Maintain positive employer/employee relations and labor relations. 

  • Assist with employee development and coach department personnel to work to full potential. 

  • Identify corrective action procedure needs for employees whose performance or conduct does not meet required levels. 

  • Conduct performance appraisals.

  • Work extended and/or irregular hours including nights, weekends and holidays as needed.

  • All essential duties and responsibilities shall also apply to events booked at Pinewood Bowl.

  • The Director of Event Services is expected to live within 25 miles of the venue once hired

Education and or Experience

Bachelor’s degree from an accredited four-year college or university and six (6) to eight (8) years related experience and/or training in the public assembly industry in a supervisory or management position; or equivalent combination of education and experience. 

 

Knowledge, Abilities, and Skills

  • Demonstrate knowledge in operational procedures, facility capabilities, industry terminology, event-related services, and technical requirements for the types of events anticipated at the facility. 
  • Possess skills and experience in contract negotiations, business law, budget preparation, labor relations, union contracts, purchasing procedures and supervising/training personnel.
  • Engage in much decision-making that is generally governed by procedure and guided by policy.
  • Follow oral and written instructions and communicate effectively with others in both oral and written form.
  • Ability to prioritize multiple projects.
  • Remain flexible and adjust to situations as they occur.
  • Demonstrate problem-solving and communication skills.
  • Organize and prioritize work to meet deadlines.
  • Maintain an effective working relationship with clients, employees, exhibitors, patrons, and others encountered in the course of employment.

Certificates, Licenses, Registrations

  • Be licensed and insured to operate a motor vehicle in the United States.

Physical Requirements

  • May spend long hours walking, standing, or sitting while working.
  • Ability to lift up to 25 lbs.
  • Manual dexterity - Regularly required to use hands to handle or feel.
  • Visual acuity for review of computer monitors, contractual agreements, etc.

Hours of the Week and Travel Requirements

  • Occasional Travel may be required.
  • Work hours may vary – Ability to work irregular hours during events if needed, including nights, weekends, and holidays.​​​​​​​

Computer Skills:                                            

  • Operate a personal computer using Windows and Microsoft Office software, specifically proficiency in Microsoft Excel.
  • Operate standard office equipment, including copier/printer, typewriter, and fax machine.
